Questions

Mustard oil, answered

Why does pure mustard oil taste so sharp?

The pungency, or ঝাঁঝ, comes naturally from compounds in the mustard seed itself. A strong, sharp aroma is a good sign the oil is pure and freshly pressed, not blended with cheaper oils.

Is mustard oil good for deep frying?

Yes. Its high smoke point and natural oxidative stability make it well suited to deep and shallow frying. Heat it until it just begins to smoke, then lower the flame. This also softens the raw pungency.

Can I use mustard oil raw?

Many Bengali dishes use a few drops of raw mustard oil for flavour, especially bhorta, jhal muri and salads. Use it sparingly; a little goes a long way.

How should I store mustard oil?

Keep the bottle tightly closed in a cool, dark place, away from the stove and direct sunlight. Stored this way, pure mustard oil stays fresh for a long time.

What is the difference between Tekka and Ghani?

Both are pure mustard oil from Janata Oil Mills, pressed from the same quality seed at our Tangail factory. Tekka is our flagship brand, famous since 1973; Ghani is our traditional everyday oil. Choose the one your family loves.
